Producer Description
The family domaine was created in the early 80's. From 2000 until 2005, Philippe Pacalet (formerly from Prieure Roch) brought his expertise to farm organically and vinify the wines in a natural way. In 2005, Fanny Sabre only 22 years old, took over the estate. Today, she overseesy 4.5ha in the Cotes de Beaune, making micro cuvees from Savigny, Aloxe, Beaune, Pommard, Volnay, Monthelie and Meursault. In addition, she vinifies some Aligote, Bourgogne Rouge & Blanc. In the early years, Fanny followed the natural style of Philippe but step by step she changed her vinification and farming with the aim of showing Terroir. When in the begining most reds were going through carbonic maceration, today they are traditionally made using different methods. The whites are pressed gently and ferment naturally in a mix of new and used barrels with a medium toast. Most of the times, she does not steer the lees to show liveliness. The reds macerate with the stems for few weeks enough to extract fine color and tannins. The wines are then put in oak until bottling without racking. Overall, they are precise, persistent and drinkable when they are released. We import all of Fanny's wines and receive them in various time of the year.
